Raspberries soaked in Lavender Infused Sweet Sake

Its the time of the year when you get some lovely raspberries… so when I went to the farm shop up the road I picked some up. I also had some sweet sake in the house, so thought I would try making raspberries soaked in lavender infused sweet sake.

When you buy the sake, make sure it is a sweeter tasting one. Ginjo or Daiginjo sake’s won’t work as well.. you probably need a Junmai sake… but check with the shop.

This is really easy to make. What you need is

  • 150ml of sweet sake (or more if you want :) / as much as you need to cover the Raspberries)
  • a couple of stems of dried lavender (you need the dried flowers but keep them on the stem so its easy to remove)
  • a handful of rasperries.

What to do:

  1. Put the raspberries in a bowl
  2. pour over the sake so it covers the raspberries
  3. add the lavender
  4. leave for 30 mins or so

when you are ready to eat them smell the lavender sake to coat your palette first and then eat the raspberries and drink the sake spoon by spoon…

one of the reader’s suggested sparkling sake too would be nice… so will have to try it out… any excuse really :)
