Roast Parsnips with Black Pepper and Orange Blossom Honey

Last couple of xmas’ I’ve also made parsnips in a couple of different ways. This particular way is my personal favourite. When cooked the parsnips become so lusciously soft. The orange blossom honey just goes so well with parsnips.

Serves 4 – 6 – What you need:

  • 6 – 7 parsnips
  • 1 1/2 tbsp of olive oil
  • a good sprinkle of salt
  • 1/2 – 1 tsp of black pepper
  • 2 tbsp of orange blossom honey

What to do:

  1. Cut the parships into chip size pieces – removing the core
  2. Par-boil the parsnips until tender
  3. Remove from the water and cool to room temperature
  4. Heat the oven to 180c
  5. Put oil in the baking tray and heat up in the oven for 5 – 10 mins
  6. Remove the tray from the oven and add the parsnips.
  7. Sprinkle with salt and pepper
  8. Toss the parsnips around coating them well in the oil, salt and pepper.
  9. Cook in the oven for about 25 mins.
  10. Half way take out the parsnips and coat in the honey and toss around.
  11. When they’re done they should be a little golden and nice and delicously soft.
