Gado Gado Salad

Gado Gado is a healthy Indonesian salad comprising of cooked vegetables served in a peanut sauce. Often you find fried tofu or tempeh added in with the vegetables – but you don’t have to. This is served with a side of prawn crackers – but leave those out if you are vegetarian. Gado Gado is a really easy salad to make and if you want you can use up left over vegetables too. All you need to do the vegetables is blanche them till tender.

For my version above I used

  • Baby corn
  • Red peppers
  • Bean sprouts
  • Green beans
  • Mangetout
  • Carrot
  • Shitake mushrooms
  • Tomato

I used these vegetables because it what I had left over but also the varied textures it creates, which is nice to eat.

What to do:

  1. Blanche the vegetables (not the tomato) individually until tender
  2. Cool immediately in ice water
  3. Drain off the excess water and set aside
  4. Mix well in a lot of the peanut sauce (recipe here)
  5. Serve with some crackers or something crispy

Alternatives:

Add some freshly cooked prawns chopped up if you want. Its not traditional but it tastes good.

You can put the salad into a wrap – its very good
